Drunken Chicken

4 boneless, skinless chicken breasts
Juice of 2 lemons
1 cup of cheap white wine
1/2 stick of butter, melted
package of Capt D's malt vinegar
shot of olive oil
1/2 tsp each: dry hot mustard, garlic powder,thyme, oregano, marajoam
Salt and pepper to taste

Mix all ingredients and pour over chicken breast in shallow baking pan. Bake covered at 400 F for 45 minutes. Turn a couple times. Uncover and broil till browned about 10 minutes.

King's Ranch Chicken Cassarole

I pgk corn tortillas, wilted in chicken broth
1 large fryer, boiled and deboned
1 can cream of mushroom soup
1 can cream of chicken soup
1 small can tomatoes and 1 can Rotel tomatoes
1 large onion chopped
1 large green pepper chopped
1 tb chili powder
Garlic salt to taste
1/2 grated cheddar cheese
In a 9x13 inch cassarole dish put a 
Layer of tortillas, then chicken.and alternate between layers. Sprinkle bell pepper, onion mixed together. Pour a mixture of the liquids mixed together on top.
Top with1/2 lb cheese. Bake at 375 for 30 minutes. Let sit 10 minutes before cutting


Chicken a le Fantome

4 TB melted butter     8 oz sliced mushrooms
1/2 cup diced green pepper   2 tb pimentos
1 1/2 tsp salt    4 TB flour
1/2 cup cream     1/2 cup chicken stock
1/2 cup milk     1/4 tsp pepper
1/4 to 1/2 tsp tumeric    1/2 tsp sugar
2 egg yolk or 1 egg beaten
2 cups diced cooked chicken

Saute mushroom (or if you prefer water chestnuts) till crisp or soft. Add green pepper, and pimento. Add salt and flour and blend. Add stock and milk, pepper, tumeric and sugar. Blend cream with egg and add to mixture. Add chicken and heat through.

Chessy Chicken Kiev

4 double breasted chickens boned and skinned
1/2 cup butter    3 oz cream cheese
1/4 tsp salt    1/4 flour
1/2 tsp each of minced onion, salad herb and lemon pepper      1/2 tsp salt
2 eggs beaten w/ 1 tb water
bread crumbs about 2 cups   Crisco to fry

Cream butter, cheese, salt, herbs and lemon pepper. Place in freezer. Skin and bone breasts and flatten between wax paper. Divide cheese mixture into 8 balls.  Place spoonful on widest side of breast and roll up folding ends in to hold the filling. Fasten with toothpicks. Dip in flour, then egg and crumbs. and Fry till golden in Crisco.

Variation on Chicken Kiev
Instead of the cream cheese mixture above make a mixture of the following: 1/2 c butter 1 TB chopped parsley 1/2 tsp tarragon 1 tb minced garlic salt and pepper cream and freeze into balls and substitute for the cream cheese balls above. Prepare and fry same way. Luby's Chicken/Turkey Tetrazzini 12 oz spaghetti 1 1/2 tsp vegetable oil 1/2 tsp salt 1 1/2 tb butter 1/4 cup chopped onion 1 small garlic clove, minced 2 cans creme of mushroom soup 1 cup chicken broth 1 tsp seasoned salt 3 cup shredded American cheese 4 cups diced chicken or turkey 2 tb chopped parsley 2 tb diced red bell pepper or pimento Heat oven to 350 F Cook spaghetti according to package direction adding oil and salt to cooking water. In large saucepan or dutch oven over medium heat melt butter, Add onion and garlic. Cook for 2 minutes, stirring. Add soup broth, seasoned salt and 1/ 1/2 cups of the cheese. Cook and still till mixture is smootch and cheese is melted. Add spaghetti and mix well. Transfer to a 2 qt baking dish. Cover. Bake 30 minutes until hot. Uncover and sprinkle with remaining cheese and bake 2 minutes until cheese melts. Sprinkle with parsley and bell peppers.
