Skillet Dinner 1/2 to 1 lb hamburger meat 1 beaten egg 1/4 cup milk 1/2 cup fine bread crumbs 3 tb minced onion 1 tsp salt 1/4 tsp dry mustard 2 tb flour 2 tb oil 1 can tomato soup 3/4 cup milk 1/ 1/2 cup mixed veggies msg sprinkle if you desire noodles with poppy seeds and butter. Combine meat, egg, bread crumbs, onion, 1/2 salt and mustard and shape into small meatballs. Heat oil and brown meatballs. Combine soup milk veggies, 1/2 tsp salt and msg. Simmer 15 minutes with meatballs. Serve over poppy seeded noodles TAMALE PIE ACAPULCO 1 lb sausage 1/2 c cornmeal 1 onion, diced 1 c grated cheddar cheese 1 bell pepper, diced 1 1/2 TB cold water 12 oz can corn 1-2 lbs ground chuck 1 cup sliced black olives 1/2 cup chopped celery salt pepper Accent 2 1/2 lb can tomatoes 1 cup cold water 2 or more TB chili powder Cook sausage with small amount of water and break it up. Drain the yukky fat and add the chuck and brown. Add onion, pepper, and celery and sauté. Then mix in the tomatoes, corn, chili powder salt and pepper, MSG. Simmer 15 minutes. Mix 1 cup water and cornmeal and blend into recipe. Cook slowly till thickened and mix in olives. Place in greased 2 qt cassarole and Bake at 350 for 1 hour. Dandy Don's Spagetti for Cowboy Games from Don Meridith 1 pkg. 8 oz spagetti 1 diced onion butter 1 1/2 lb ground round salt, pepper can of tomatoe sauce can mushroom soup dash Worchester sauce garlic powder, chili powder, seasoned salt pkg grated cheddar cheese Cook spagetti until just tender. Brown onion in a dab of butter and then brown the meat. Add seasoning to taste and soup and tomatoe sauce. Mix the spagetti with the meat sauce. Cover and bake for 15 minutes at 350° Top with cheese and return to oven just to melt and watch America's Team and enjoy! Enchilada Cassarole 1 chopped onion 1-2 lb ground chuck 3 TB chili powder 1 8 oz can tomatoe sauce 1 1/2 cup half and half pkg of corn tortillas 1 block cheddar cheese, grated 2 tb butter 2 tb flour 1 cup water 1 tsp salt.. can tomatoe soup... Saute half of the onion until soft. Add the chuck and brown. Add the flour or masa harina if you wish and chili powder and some water and tomato sauce and simmer till thick. In a bowl mix the soup, creme and the rest of the onion. In a 9 x 13 inch pan tear the tortillas in about silver dollar size pieces and line the bottom of the pan. Put half of the chili mixture on top and on top of that put half of the cheese. Repeat with the tortillas, chili and cheese. Pour the soup mixture over that and cook for 375 in the oven till bubbley....Set sit a few minutes and cut into squares and enjoy....
